- 2 medium zucchinis, grated
- 1 cup Parmesan cheese, grated
- 1/2 cup Mozzarella cheese, shredded
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 cloves garlic, minced

Instructions
- Start by grating the zucchinis and placing them in a clean kitchen towel. Squeeze out any excess moisture; the drier the zucchini, the crispier your fritters will be!
- Combine the grated zucchini with Parmesan cheese, Mozzarella cheese, flour, eggs, minced garlic, salt, and pepper in a mixing bowl. Mix until everything is well combined and feels cohesive.
- Heat a generous splash of olive oil in a pan over medium heat. The warmth should make your kitchen smell inviting!
- Drop spoonfuls of the zucchini mixture onto the pan, slightly flattening them to form fritters.
- Fry each fritter for about 3-4 minutes on each side, or until they’re golden brown and crispy.
