Description

Quick and easy zucchini fritters that are golden, crispy, and packed with flavor, perfect for a summer snack or side dish.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Start by grating the zucchinis and placing them in a clean kitchen towel. Squeeze out any excess moisture; the drier the zucchini, the crispier your fritters will be!
  2. Combine the grated zucchini with Parmesan cheese, Mozzarella cheese, flour, eggs, minced garlic, salt, and pepper in a mixing bowl. Mix until everything is well combined and feels cohesive.
  3. Heat a generous splash of olive oil in a pan over medium heat. The warmth should make your kitchen smell inviting!
  4. Drop spoonfuls of the zucchini mixture onto the pan, slightly flattening them to form fritters.
  5. Fry each fritter for about 3-4 minutes on each side, or until they’re golden brown and crispy.
