Description

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • Cornstarch (for dusting)

Instructions

  1. Combine the watermelon juice, sweet rice flour, sugar, and salt in a mixing bowl. Stir until smooth.
  2. Transfer the mixture to a heatproof dish, ensuring it’s spread evenly.
  3. Steam the mixture over boiling water for about 20 minutes, stirring occasionally.
  4. Dust a clean surface generously with cornstarch, then pour the mochi mixture onto the surface.
  5. Knead the mochi once it’s cool enough to handle, dusting your hands with cornstarch.
  6. Shape the mochi into small balls or flatten it into squares.
  7. Dust with more cornstarch to prevent sticking.
  8. Store in an airtight container and enjoy.

Notes

Mochi can be made in advance and stored in an airtight container in the fridge. Experiment with different fruit juices for unique flavors.
