Ingredients

- 6–8 cups watermelon, cubed
- 2 cups arugula
- 1 heaping cup fresh basil, chopped
- 2/3 cup feta cheese
- 1/2 large red onion, thinly sliced
- 1/4 cup pine nuts
- Flaky sea salt, to taste
- Freshly cracked black pepper, to taste
- 1/4 cup olive oil
- 2 Tbsp. red wine vinegar
- 2 Tbsp. lemon juice, freshly squeezed
- 1–2 Tbsp. honey
- 1 Tbsp. Dijon mustard
- Salt and pepper, to taste
Instructions
- Combine the cubed watermelon, arugula, chopped basil, feta cheese, sliced red onion, and pine nuts in a large bowl.
- Whisk together the olive oil, red wine vinegar, lemon juice, honey, Dijon mustard, salt, and pepper in a small bowl to create the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Season with flaky sea salt and freshly cracked black pepper to taste.
- Serve immediately and enjoy your refreshing summer salad!
