Instructions
- Preheat the oven to 325°F (163°C).
- Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of a springform pan to form the crust.
- Beat the softened cream cheese in a large mixing bowl until smooth.
- Add the sugar and vanilla extract, and continue mixing until well combined.
- Add the eggs one at a time, mixing well after each addition for a creamy texture.
- Stir in the sour cream until smooth and dreamy.
- Pour the cheesecake filling over the crust in the springform pan, smoothing the top.
- Bake for 55-60 minutes, or until the center is set and the edges are lightly browned.
- Cool the cheesecake, then refrigerate for at least 240 minutes before serving.
