- 2 small onions, diced
- 1 tablespoon olive oil
- 1 teaspoon minced garlic (or 1 teaspoon garlic powder)
- 1 green bell pepper (can use red or yellow)
- 1 pound lean ground beef
- 1/2 teaspoon onion powder
- 1/2 teaspoon oregano
- 1/2 teaspoon smoked or sweet paprika
- 1 can diced tomatoes (14 oz can)
- Salt and pepper to taste
- 1/2 a large head of cabbage, chopped into bite-size pieces
- 1 to 2 cups shredded cheddar cheese (can use Monterey jack cheese)
Instructions
- Prepare your vegetables. Dice the onions and bell peppers and mince the garlic. Chop half of the cabbage into bite-sized pieces.
- Heat olive oil in a large deep-sided skillet or Dutch oven over medium-high heat. Add the diced onions and minced garlic, sauté for about 3-4 minutes until soft.
- Add the diced bell pepper and sauté until soft. Remove from the pan and set aside.
- Add the second tablespoon of olive oil and the ground beef to the same pan, browning the beef while breaking it up until fully cooked.
- Top the browned beef with onion powder, oregano, paprika, diced tomatoes, salt, and pepper. Mix well.
- Add the chopped cabbage to the skillet, cover, and cook on medium heat for 10 minutes.
- Stir the mixture and continue cooking for another 15 minutes until the cabbage is wilted and tender.
- Sprinkle shredded cheese on top and allow it to melt before serving warm.
Notes
This dish is perfect for make-ahead meals. Store leftovers in an airtight container for up to 3 days.
