Ingredients

Scale
  • 1 cup Greek yogurt
  • 1½ packed cups cucumber (9 ounces), grated
  • 2 tablespoons dill, chopped
  • 1 tablespoon mint, chopped (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • ½ teaspoon salt

Instructions

  1. Grate the cucumber using the large holes of a box grater.
  2. Drain excess liquid from the grated cucumber.
  3. Mix together the drained cucumber, Greek yogurt, dill, mint, lemon juice, olive oil, garlic, and salt in a bowl.
  4. Taste and adjust seasoning as needed.
  5. Let the tzatziki chill in the fridge for at least 30 minutes.
  6. Serve by spreading on a plate, drizzling with olive oil, and adding fresh herbs or paprika on top.

Notes

Tzatziki can be made a day in advance for optimal flavor. Store leftovers in an airtight container for 3-5 days.
