Description

A creamy and refreshing salad that combines classic tzatziki flavors with hearty pasta, perfect for summer gatherings.


Ingredients

Scale
  • 8 oz pasta (fusilli or penne)
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and let cool.
  2. Mix the Greek yogurt, olive oil, lemon juice, salt, and pepper in a large bowl until combined.
  3. Add the cooled pasta, diced cucumber, cherry tomatoes, red onion, and dill to the bowl.
  4. Toss gently until all ingredients are well coated in the dressing.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made a day in advance for deeper flavors. Store leftovers in an airtight container for up to 2-3 days.
