Ingredients

- 8 oz pasta (fusilli or penne)
- 1 cup Greek yogurt
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and let cool.
- Mix the Greek yogurt, olive oil, lemon juice, salt, and pepper in a large bowl until combined.
- Add the cooled pasta, diced cucumber, cherry tomatoes, red onion, and dill to the bowl.
- Toss gently until all ingredients are well coated in the dressing.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
This salad can be made a day in advance for deeper flavors. Store leftovers in an airtight container for up to 2-3 days.
