Ingredients

  • 1 can pumpkin puree
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant.
  2. Add the ground turkey, breaking it apart with a wooden spoon, and cook until browned, stirring frequently.
  3. Stir in the chili powder, cumin, salt, and pepper, letting the spices meld with the turkey for about a minute.
  4. Add the pumpkin puree, black beans, kidney beans, diced tomatoes (with their juices), and chicken broth to the pot. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes, stirring occasionally. Allow the flavors to deepen and meld together.
  6. Taste and adjust the seasonings as needed, adding more salt, pepper, or spices to suit your preference.
  7. Serve hot, garnished with your favorite toppings.
