  • 2/3 cup water
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water (to thin beans slightly)
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/monterey jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Instructions

  1. Cook the meat: In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add taco seasoning and water. Simmer for 5 minutes until thickened and fragrant.
  2. Prepare the beans: In a small saucepan, warm refried beans with 1/4 cup water, stirring until smooth and spreadable.
  3. Crisp tortillas: Fried Method: Heat 2–3 tbsp of oil in a skillet. Fry tortillas one at a time until golden and crisp, about 1–2 minutes per side. Drain on paper towels. Healthier Method: Brush or spray tortillas lightly with oil. Bake in a preheated oven at 400°F (200°C) for 5–7 minutes per side until crisp.
  4. Assemble pizzas: On a baking sheet, lay one tortilla down. Spread a generous layer of warm beans followed by a layer of seasoned meat. Top with another tortilla, then scoop a spoonful of enchilada sauce over the top. Sprinkle with cheese and finish with diced tomatoes, green onions, and olives, if using.
  5. Bake: Place in the oven and bake at 400°F (200°C) for 8–10 minutes, until the cheese is melted and bubbly.
