Description

Delicious bite-sized pinwheels filled with creamy spinach dip, perfect for any occasion.


Ingredients

  • 1 bag frozen chopped spinach (10 oz), thawed and squeezed dry
  • 1 block cream cheese (8 oz), softened to room temperature
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Pinch of red pepper flakes (optional)
  • 1 sheet puff pastry, thawed but still cold
  • 1 egg, for brushing

Instructions

  1. Combine the softened cream cheese, grated Parmesan, mayonnaise, garlic powder, onion powder, and black pepper in a mixing bowl until creamy and smooth.
  2. Squeeze the thawed spinach dry, then add it to the bowl and mix until evenly combined.
  3. Flour your countertop and roll out the puff pastry sheet into a nice rectangle.
  4. Spread the spinach mixture over the pastry, leaving one long side empty.
  5. Roll the pastry tightly into a log.
  6. Wrap the log in plastic wrap and refrigerate for 30 minutes.
  7. Preheat your oven to 400°F (205°C).
  8. Slice the log into half-inch rounds and place them on a baking sheet lined with parchment paper.
  9. Brush the tops with beaten egg for a golden finish.
  10. Bake for 15-20 minutes until puffed and golden brown.

Notes

Make-ahead: Can be prepped and stored in the fridge for 24 hours before baking. Store leftovers in an airtight container in the fridge for 2-3 days or freeze unbaked for a quick snack later.
