Delicious stuffed peppers filled with shredded chicken, buffalo sauce, cream cheese, and topped with cheddar cheese for a comforting and spicy twist.

- 4 bell peppers (any color)
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1/2 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix together the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and chopped green onions. Season with salt and pepper to taste.
- Stuff the mixture into the bell peppers and place them in a baking dish.
- Drizzle with olive oil and top with the remaining cheddar cheese.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes or until the peppers are tender and the cheese is bubbly.
