Description

Delicious stuffed peppers filled with shredded chicken, buffalo sauce, cream cheese, and topped with cheddar cheese for a comforting and spicy twist.


Ingredients

  • 4 bell peppers (any color)
  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and chopped green onions. Season with salt and pepper to taste.
  4. Stuff the mixture into the bell peppers and place them in a baking dish.
  5. Drizzle with olive oil and top with the remaining cheddar cheese.
  6. Cover with foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes or until the peppers are tender and the cheese is bubbly.
