- 1 cup long-grain rice
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- 2 tablespoons olive oil
- Chopped cilantro for garnish (optional)
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the rice and cook until slightly toasted, about 2-3 minutes.
- Next, stir in the canned tomatoes, broth, chili powder, cumin, and salt. Mix well.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes.
- Fluff the rice with a fork and garnish with chopped cilantro if desired.
