Description

A comforting and flavorful Spanish Rice recipe made with spices, perfect for busy weeknights.


Ingredients

  • 1 cup long-grain rice
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 2 tablespoons olive oil
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in the rice and cook until slightly toasted, about 2-3 minutes.
  4. Next, stir in the canned tomatoes, broth, chili powder, cumin, and salt. Mix well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes.
  6. Fluff the rice with a fork and garnish with chopped cilantro if desired.
