Description

Delicious cookie bars that capture the nostalgic flavors of s’mores with graham crackers, chocolate, and marshmallows.


Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • Extra chocolate chips and marshmallows for topping, to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until creamy and smooth.
  3. Add the eggs, one at a time, followed by the vanilla extract, until the mixture is well combined and fluffy.
  4. Combine the all-purpose flour, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Incorporate the graham cracker crumbs, chocolate chips, and mini marshmallows, creating a chunky batter.
  6. Spread the batter into the prepared baking dish and top with extra chocolate chips and marshmallows. Bake for 25 to 30 minutes, or until golden brown.
  7. Let the cookie bars cool in the pan for at least 15 minutes before slicing into squares.

Notes

You can customize these bars with nuts, berries, or mint chocolate. They store well at room temperature for up to a week.
