Description

A comforting slow cooker casserole packed with creamy potatoes, seasoned beef, and zesty beans.


Ingredients

  • 2 pounds ground beef
  • 4 medium potatoes, diced
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. In a skillet over medium heat, brown the ground beef along with the onion and garlic until fully cooked and fragrant. Don’t forget to drain the excess fat!
  2. In the slow cooker, combine the beautifully browned beef, diced potatoes, tomato sauce, kidney beans, corn, chili powder, salt, and pepper. Mix it all together until everything is evenly coated.
  3. Cover the slow cooker with a lid, letting the delicious aroma fill your kitchen.
  4. Cook on low for 360 minutes or on high for 240 minutes, until the potatoes are tender and fully cooked through.
  5. If you’re feeling cheesy, sprinkle the cheese on top during the last 30 minutes of cooking for a glorious, gooey finish!
  6. Serve it warm, scoop it into bowls, and enjoy your hearty meal with loved ones.

Notes

This casserole freezes beautifully. Assemble it without the cheese and freeze for later.
