Description
A comforting slow cooker casserole packed with creamy potatoes, seasoned beef, and zesty beans.
Ingredients
Scale
- 2 pounds ground beef
- 4 medium potatoes, diced
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) kidney beans, drained
- 1 cup corn (frozen or canned)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (optional)
Instructions
- In a skillet over medium heat, brown the ground beef along with the onion and garlic until fully cooked and fragrant. Don’t forget to drain the excess fat!
- In the slow cooker, combine the beautifully browned beef, diced potatoes, tomato sauce, kidney beans, corn, chili powder, salt, and pepper. Mix it all together until everything is evenly coated.
- Cover the slow cooker with a lid, letting the delicious aroma fill your kitchen.
- Cook on low for 360 minutes or on high for 240 minutes, until the potatoes are tender and fully cooked through.
- If you’re feeling cheesy, sprinkle the cheese on top during the last 30 minutes of cooking for a glorious, gooey finish!
- Serve it warm, scoop it into bowls, and enjoy your hearty meal with loved ones.
Notes
This casserole freezes beautifully. Assemble it without the cheese and freeze for later.
