Description

A creamy and flavorful dish inspired by the classic Mexican street corn, perfect as a side or standalone treat.


Ingredients

  • 2 tablespoons butter
  • 4 cups frozen corn
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese
  • 1/4 cup cilantro or green onions

Instructions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Stir in the frozen corn and cook just until heated through, stirring often.
  3. Add the mayonnaise, sour cream, lime juice, ground cumin, and chili powder; stir until combined.
  4. Fold in half of the cotija cheese until melted.
  5. Sprinkle with remaining cotija cheese and garnish with chili powder and cilantro or green onions.

Notes

Feel free to customize with jalapeños for spice or fresh herbs for a light flavor.
