Description

A delightful Radiatori pasta salad dressed in creamy pesto, with prosciutto, slow-roasted tomatoes, and fresh basil—a perfect dish for gatherings.


Ingredients

  • 8 oz Radiatori pasta
  • 4 oz Prosciutto, thinly sliced
  • 8 oz Burrata cheese
  • 1 cup Slow roasted tomatoes
  • 1 cup Fresh basil, roughly chopped
  • ½ cup Pesto
  • ¼ cup Parmigiano cheese, freshly grated
  • ¼ cup Pistachios, roughly chopped
  • 2 tbsp Aged balsamic vinaigrette

Instructions

  1. Cook the Radiatori pasta according to package instructions until al dente. Drain and let it cool.
  2. Combine the cooled pasta, prosciutto, burrata, slow-roasted tomatoes, and fresh basil in a large bowl.
  3. Add pesto and toss gently to coat.
  4. Sprinkle with Parmigiano and pistachios.
  5. Drizzle with aged balsamic vinaigrette and toss again.
  6. Serve chilled or at room temperature.
