Description

A refreshing cocktail blending coconut milk, pineapple juice, and lime juice, perfect for summer gatherings.


Ingredients

Scale
  • 1 tsp agave syrup
  • 1 tbsp fine sea salt
  • Zest of ½ lime
  • Ice
  • 1 ½ oz tequila (blanco or reposado)
  • ½ oz coconut liqueur (or coconut rum)
  • 1 oz freshly squeezed lime juice
  • 2 oz pineapple juice
  • ¼½ oz agave syrup (or simple syrup)
  • 1 oz canned coconut milk (or ½ oz coconut cream)
  • Garnish: pineapple wedge, lime slice, pineapple leaf (optional)

Instructions

  1. Prep your glass by brushing the rim with agave syrup and setting aside. Mix together the sea salt and lime zest on a small plate and dip the glass rim into the mixture.
  2. Fill the glass with ice and set it aside.
  3. Combine tequila, coconut liqueur, lime juice, pineapple juice, agave syrup, and coconut milk in a cocktail shaker.
  4. Add ice to the shaker and shake vigorously for a few seconds until well chilled.
  5. Strain the mixture into your prepared glass filled with ice.
  6. Garnish with a pineapple wedge, lime slice, and a pineapple leaf if desired. Enjoy!

Notes

Prep the cocktail mixer in advance and store it in the fridge for easy serving when guests arrive.
