A refreshing cocktail blending coconut milk, pineapple juice, and lime juice, perfect for summer gatherings.
Ingredients

- 1 tsp agave syrup
- 1 tbsp fine sea salt
- Zest of ½ lime
- Ice
- 1 ½ oz tequila (blanco or reposado)
- ½ oz coconut liqueur (or coconut rum)
- 1 oz freshly squeezed lime juice
- 2 oz pineapple juice
- ¼–½ oz agave syrup (or simple syrup)
- 1 oz canned coconut milk (or ½ oz coconut cream)
- Garnish: pineapple wedge, lime slice, pineapple leaf (optional)
Instructions
- Prep your glass by brushing the rim with agave syrup and setting aside. Mix together the sea salt and lime zest on a small plate and dip the glass rim into the mixture.
- Fill the glass with ice and set it aside.
- Combine tequila, coconut liqueur, lime juice, pineapple juice, agave syrup, and coconut milk in a cocktail shaker.
- Add ice to the shaker and shake vigorously for a few seconds until well chilled.
- Strain the mixture into your prepared glass filled with ice.
- Garnish with a pineapple wedge, lime slice, and a pineapple leaf if desired. Enjoy!
Notes
Prep the cocktail mixer in advance and store it in the fridge for easy serving when guests arrive.
