- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup fresh peaches, diced
- 1/2 cup powdered sugar
- 1 tablespoon honey
- 1 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream and vanilla extract until just combined.
- Fold in the diced peaches gently.
- Turn the dough out onto a floured surface and pat into a circle about 1 inch thick. Cut into wedges.
- Place the wedges on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown.
- Whisk together the powdered sugar, honey, and vanilla for the glaze and drizzle over warm scones.
Notes
For a crispy topping, sprinkle with coarse sugar before baking. Refrigerate shaped dough overnight for morning baking.
