Description

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, diced
  • 1/2 cup powdered sugar
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Fold in the diced peaches gently.
  6. Turn the dough out onto a floured surface and pat into a circle about 1 inch thick. Cut into wedges.
  7. Place the wedges on the prepared baking sheet.
  8. Bake for 15-20 minutes until golden brown.
  9. Whisk together the powdered sugar, honey, and vanilla for the glaze and drizzle over warm scones.

Notes

For a crispy topping, sprinkle with coarse sugar before baking. Refrigerate shaped dough overnight for morning baking.
