  • 3 tablespoons cornstarch
  • 3/4 cup all-purpose flour
  • 1/4 cup large flake oats (quick oats or old-fashioned oats)
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter (melted)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat the oven to 350F degrees. Line an 8×8 inch pan with parchment paper, leaving an overhang around the edges for easy removal.
  2. Make the Shortbread Base: In a medium bowl, whisk together 1 1/4 cup flour, 1/2 cup powdered sugar, and salt. Stir in the melted butter until combined.
  3. Press the mixture firmly into the bottom of the prepared pan and bake for 15 minutes, until just slightly golden.
  4. While the base bakes, prepare the peach layer: Toss the chopped peaches with 1/4 cup granulated sugar, 2 tablespoons lemon juice, and 3 tablespoons cornstarch until the peaches are evenly coated.
  5. Make the Crumble Topping: In another medium bowl, stir together 3/4 cup flour, 1/4 cup large flake oats, 1/3 cup brown sugar, and 1 teaspoon cinnamon. Pour in 1/3 cup melted butter and mix until it resembles wet sand.
  6. Spread the peach mixture evenly over the baked shortbread base, then crumble the oat topping over the peaches.
  7. Bake in the preheated oven for 35-45 minutes, or until the crumble topping looks golden brown and the peach layer is bubbling.
  8. Allow to cool completely in the pan on a wire rack.
  9. For the glaze, whisk together 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and enough cream to reach a smooth drizzling consistency. Add more cream or sugar as needed.
  10. Drizzle the glaze over the cooled bars and slice into squares to serve.
