- 3 cups chopped peaches (about 4–5 large peaches)

- 3 tablespoons cornstarch
- 3/4 cup all-purpose flour
- 1/4 cup large flake oats (quick oats or old-fashioned oats)
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 1/3 cup unsalted butter (melted)
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 4–5 tablespoons cream (or milk)
Instructions
- Preheat the oven to 350F degrees. Line an 8×8 inch pan with parchment paper, leaving an overhang around the edges for easy removal.
- Make the Shortbread Base: In a medium bowl, whisk together 1 1/4 cup flour, 1/2 cup powdered sugar, and salt. Stir in the melted butter until combined.
- Press the mixture firmly into the bottom of the prepared pan and bake for 15 minutes, until just slightly golden.
- While the base bakes, prepare the peach layer: Toss the chopped peaches with 1/4 cup granulated sugar, 2 tablespoons lemon juice, and 3 tablespoons cornstarch until the peaches are evenly coated.
- Make the Crumble Topping: In another medium bowl, stir together 3/4 cup flour, 1/4 cup large flake oats, 1/3 cup brown sugar, and 1 teaspoon cinnamon. Pour in 1/3 cup melted butter and mix until it resembles wet sand.
- Spread the peach mixture evenly over the baked shortbread base, then crumble the oat topping over the peaches.
- Bake in the preheated oven for 35-45 minutes, or until the crumble topping looks golden brown and the peach layer is bubbling.
- Allow to cool completely in the pan on a wire rack.
- For the glaze, whisk together 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and enough cream to reach a smooth drizzling consistency. Add more cream or sugar as needed.
- Drizzle the glaze over the cooled bars and slice into squares to serve.
Notes
Make these bars a day in advance for enhanced flavor. Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.
