- 500 g ripe peaches
- 100 ml cane sugar syrup
- 1 tablespoon lime juice
- 400 g heavy cream
- 3 egg yolks
- 50 g sugar
Instructions
- Prepare Your Peaches: Wash, pit, and chop the peaches into small cubes.
- Cook the Syrup: In a small saucepan, combine the cane sugar syrup, lime juice, and 3 tablespoons of the peach cubes. Heat gently for about 2 minutes.
- Make the Puree: Add the remaining peach cubes to the syrup, bring to a boil, and stir continuously for 2-3 minutes until it thickens slightly. Puree the mixture until smooth and cool it in the fridge for 30 minutes.
- Create the Custard: In another saucepan, heat the heavy cream until it’s steaming. Meanwhile, whisk the egg yolks and sugar together until creamy. Gradually pour the hot cream into the egg mixture, stirring constantly.
- Combine and Chill: Mix in the peach puree and chill in the refrigerator for another 30 minutes.
- Churn the Ice Cream: Pour the mixture into an ice cream maker and churn for 45-60 minutes until creamy. Add in the cooled peach cubes while churning.
Notes
Make ahead and store in an airtight container for up to two weeks. Use only ripe peaches for the best flavor.
