- 2 pounds carrots, peeled and sliced into 1/4 inch thick fries
- 1 tablespoon oil
- Salt and pepper to taste
- 1/2 cup Parmigiano Reggiano (Parmesan cheese), grated
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with a silicon mat or parchment paper.
- Toss the carrot fries with the oil, salt, and pepper until they’re evenly coated.
- Sprinkle the grated Parmigiano Reggiano over the carrot fries, mixing gently.
- Spread the carrot fries in a single layer on the prepared baking sheet.
- Roast in the oven for about 16-20 minutes, or until tender and lightly charred, mixing halfway through.
Notes
Optionally, serve with chipotle mayo dip and garnish with fresh parsley. For herb infusion, add rosemary or thyme; for a spicy kick, use cayenne or smoked paprika.
