Description

A delightful twist on traditional fries, these Parmesan Roasted Carrot Fries are a comforting and nutritious side dish featuring sweet carrots and cheesy goodness.


Ingredients

  • 2 pounds carrots, peeled and sliced into 1/4 inch thick fries
  • 1 tablespoon oil
  • Salt and pepper to taste
  • 1/2 cup Parmigiano Reggiano (Parmesan cheese), grated

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with a silicon mat or parchment paper.
  2. Toss the carrot fries with the oil, salt, and pepper until they’re evenly coated.
  3. Sprinkle the grated Parmigiano Reggiano over the carrot fries, mixing gently.
  4. Spread the carrot fries in a single layer on the prepared baking sheet.
  5. Roast in the oven for about 16-20 minutes, or until tender and lightly charred, mixing halfway through.

Notes

Optionally, serve with chipotle mayo dip and garnish with fresh parsley. For herb infusion, add rosemary or thyme; for a spicy kick, use cayenne or smoked paprika.
