Description

Ingredients

  • 2 chicken breasts
  • 1 cup pesto sauce
  • 1 package of tortellini (fresh or frozen)
  • 1 cup asparagus, trimmed and cut into pieces
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large skillet or pan over medium heat. Season the chicken breasts generously with salt and pepper, then add them to the pan. Cook until browned and cooked through, about 6-7 minutes per side.
  2. Remove the chicken from the pan and allow it to rest. In the same skillet, add the asparagus and cherry tomatoes, sautéing for 3-4 minutes until tender and fragrant.
  3. Add the tortellini (cooked according to package instructions) and the pesto sauce to the pan. Stir everything to combine, letting the flavors meld together.
  4. Slice the rested chicken and place it on top of the tortellini and vegetables. The colors should look vibrant and inviting!
  5. Serve warm, garnished with grated Parmesan cheese if desired. Enjoy!
