- 2 chicken breasts
- 1 cup pesto sauce
- 1 package of tortellini (fresh or frozen)
- 1 cup asparagus, trimmed and cut into pieces
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet or pan over medium heat. Season the chicken breasts generously with salt and pepper, then add them to the pan. Cook until browned and cooked through, about 6-7 minutes per side.
- Remove the chicken from the pan and allow it to rest. In the same skillet, add the asparagus and cherry tomatoes, sautéing for 3-4 minutes until tender and fragrant.
- Add the tortellini (cooked according to package instructions) and the pesto sauce to the pan. Stir everything to combine, letting the flavors meld together.
- Slice the rested chicken and place it on top of the tortellini and vegetables. The colors should look vibrant and inviting!
