Description

A simple and flavorful rosemary focaccia that fills your home with delightful aromas and is perfect for any occasion.


Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 2 teaspoons salt
  • 1 ¾ cups warm water (about 110°F)
  • ¼ cup olive oil, plus more for drizzling
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
  • Coarse sea salt, for sprinkling on top

Instructions

  1. Mix the Dough: In a large mixing bowl, combine the flour, instant yeast, and salt. Pour in the warm water and olive oil. Using a wooden spoon or your hands, mix until a shaggy dough forms.
  2. Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until it’s smooth and elastic.
  3. First Rise: Lightly grease a large bowl with olive oil and place the dough inside, turning it to coat in the oil. Cover the bowl and let it rise in a warm place for about 60 minutes or until doubled in size.
  4. Prepare the Baking Pan: Grease a 9×13-inch baking pan with olive oil and sprinkle half of the chopped rosemary across the bottom.
  5. Shape the Dough: Once the dough has risen, gently deflate it and transfer it to the prepared pan. Use your fingers to stretch and press the dough into the corners, creating dimples across the surface.
  6. Second Rise: Sprinkle the remaining rosemary on top and drizzle with more olive oil. Cover again and let it rise for another 30 minutes.
  7. Preheat and Bake: Preheat the oven to 400°F (200°C). Once the dough has risen, sprinkle coarse sea salt generously over the top. Bake for 20-25 minutes, or until the focaccia is golden brown.
  8. Cool and Serve: Allow the focaccia to cool for a few minutes in the pan before transferring it to a wire rack. Slice into squares and enjoy warm!

Notes

For a garlic infusion, add minced garlic to the dough. Try adding toppings like olives or cheese for variation.
