Description

This Maple Walnut Coffee Cake is a comforting treat, perfect for chilly mornings and cozy afternoons, filled with earthy sweetness and nutty aromas.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup walnuts, chopped
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
  6. Fold in the chopped walnuts.
  7. Pour half of the batter into the prepared baking pan.
  8. Mix together the brown sugar and cinnamon for the streusel topping, then sprinkle half of this mixture over the batter in the pan.
  9. Spread the remaining batter on top, and then sprinkle the rest of the streusel topping over it.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow to cool slightly before serving.

Notes

For added indulgence, consider folding in chocolate chips, adding fresh berries, or drizzling with maple glaze.
