  • 2 chicken breasts (cubed or sliced thin)
  • 1 lb potato gnocchi (store-bought or homemade)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Start by slicing the chicken, halving your tomatoes, and preparing the gnocchi. Measure out the chicken broth, heavy cream, lemon juice, and zest.
  2. Heat the olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then add it to the skillet. Cook the chicken until golden brown and fully cooked through, about 5–7 minutes. Once done, remove it from the skillet and set it aside.
  3. In the same skillet, toss in the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and continue to sauté for about 2 minutes until they soften.
  4. Next, pour in the chicken broth and bring it to a simmer. Lower the heat and stir in the heavy cream, along with the lemon zest and juice. (Tip: To avoid curdling the cream with the lemon, briefly remove the skillet from the heat when adding the citrus.)
  5. Now it’s time to stir in the gnocchi. Cook for about 3-4 minutes until the gnocchi are tender and delightful.
  6. Just before finishing, toss in the baby spinach; it will wilt beautifully and add vibrant color to your dish.
  7. Finally, return the chicken to the skillet. Give everything a gentle stir to combine, season to taste, and garnish with freshly chopped parsley or basil before serving.

Notes

Make-ahead options include prepping chicken, garlic, and veggies in advance. Store leftovers in an airtight container for up to 3 days.
