- 1 cup softened butter
- 1 cup sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups rolled oats
- 1 cup shredded coconut
- 1 cup chopped pecans
- 2 cups chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the softened butter, sugar, and brown sugar together until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix the flour, baking soda, and salt in another bowl until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
- Stir in the oats, coconut, pecans, and chocolate chips until well distributed.
- Drop tablespoonfuls of dough onto ungreased baking sheets.
- Bake for 10 to 12 minutes, or until edges are golden brown.
- Cool on baking sheets for a few minutes before transferring to wire racks.
Notes
For even sizes, use an ice cream scoop. Can be refrigerated for up to three days before baking.
