Description

These Cowboy Cookies, inspired by Laura Bush’s recipe, combine crunchy oats and rich chocolate chips for a cozy treat that’s perfect for any occasion.


Ingredients

  • 1 cup softened butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 2 cups chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter, sugar, and brown sugar together until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Mix the flour, baking soda, and salt in another bowl until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until smooth.
  6. Stir in the oats, coconut, pecans, and chocolate chips until well distributed.
  7. Drop tablespoonfuls of dough onto ungreased baking sheets.
  8. Bake for 10 to 12 minutes, or until edges are golden brown.
  9. Cool on baking sheets for a few minutes before transferring to wire racks.

Notes

For even sizes, use an ice cream scoop. Can be refrigerated for up to three days before baking.
