  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Lemons (juiced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Crumbled Feta Cheese
  • 2 tablespoons Fresh Parsley (for garnish)

Instructions

  1. Marinate the chicken: In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken breasts and ensure they are well-coated with the marinade. Cover and refrigerate for 30 minutes to 2 hours.
  2. Preheat the oven: As you approach the end of the marinating time, preheat your oven to 400°F (200°C).
  3. Sear the chicken: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Carefully place the marinated chicken breasts in the skillet and sear for 3-4 minutes on each side.
  4. Add feta and lemon: Once the chicken is nicely browned, sprinkle the crumbled feta cheese generously over the top.
  5. Bake the chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Rest and garnish: Remove the skillet from the oven and let the chicken rest for a few minutes. Garnish with chopped parsley before serving.

For added flavor, consider marinating the chicken overnight.
