Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 cup pasta (elbow or bowtie)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add the chopped onion and minced garlic, cooking until translucent, about 3–5 minutes.
- Stir in the diced carrots and celery, cooking for another 5 minutes.
- Pour in the diced tomatoes with juices, beef broth, and Italian seasoning. Bring to a boil.
- Toss in the pasta of choice, reduce heat, and simmer until tender, about 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
Make-ahead and store in the fridge for up to 3 days. Freezes well for up to 3 months. For a vegetarian version, substitute ground beef with plant-based meat or beans.
