Description

A comforting Italian soup made with ground beef, pasta, and vegetables, perfect for chilly evenings.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup pasta (elbow or bowtie)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, cooking until translucent, about 3–5 minutes.
  3. Stir in the diced carrots and celery, cooking for another 5 minutes.
  4. Pour in the diced tomatoes with juices, beef broth, and Italian seasoning. Bring to a boil.
  5. Toss in the pasta of choice, reduce heat, and simmer until tender, about 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

Make-ahead and store in the fridge for up to 3 days. Freezes well for up to 3 months. For a vegetarian version, substitute ground beef with plant-based meat or beans.
