Description

A cozy, high-protein dinner bowl featuring marinated chicken, creamy avocado, and fluffy rice, perfect for any weeknight.


Ingredients

  • 2 large chicken breasts (about 400g)
  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Whisk together honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper in a bowl.
  2. Add the chicken breasts to the marinade and let them soak for 10–15 minutes.
  3. Heat a skillet over medium heat and cook the marinated chicken for 5–7 minutes on each side until golden and fully cooked.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
  5. Prepare bowls by adding warm rice as the base.
  6. Arrange sliced chicken over the rice.
  7. Add avocado slices, cherry tomatoes, corn, and red onion atop the chicken.
  8. Sprinkle with fresh cilantro, and add a dollop of Greek yogurt or sour cream. For extra heat, sprinkle chili flakes to taste!
  9. Serve immediately while warm, and enjoy the colorful burst of flavors.

Notes

Marinate the chicken overnight for richer flavor. Store leftovers in an airtight container in the fridge for up to three days.
