Description

A quick and delicious Honey Garlic Chicken and Sweet Potato recipe that warms the heart and pleases the palate.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together the honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl until well combined.
  2. Marinate the chicken breasts in this mixture for at least 30 minutes or up to 8 hours in the refrigerator.
  3. Preheat your oven to 400°F (200°C).
  4. Spread the cubed sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper.
  5. Roast the sweet potatoes for about 15 minutes until they start to soften.
  6. Remove the baking sheet from the oven and push the sweet potatoes to one side.
  7. Place the marinated chicken on the other side and arrange the green beans around them.
  8. Drizzle the remaining marinade over the chicken and vegetables.
  9. Bake for an additional 20-25 minutes until the chicken reaches an internal temperature of 165°F and the sweet potatoes are tender.

Notes

Marinate the chicken the night before for deeper flavor. Leftovers can be stored in an airtight container for up to 3 days.
