Ingredients

- 2 cups pre-cooked chicken, shredded
- 1 cup cottage cheese
- 1 cup enchilada sauce
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced bell peppers
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Avocado and cilantro for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together shredded chicken, cottage cheese, black beans, corn, diced bell peppers, cumin, chili powder, salt, and pepper in a large bowl.
- Pour half of the enchilada sauce into the bottom of a baking dish.
- Layer the chicken mixture on top of the sauce, spreading it evenly.
- Pour the remaining enchilada sauce over the top.
- Cover with foil and bake for 20-25 minutes, until heated through.
- Serve topped with avocado and cilantro.
Notes
This dish stores well in the fridge for about 3 days. For a creamier texture, substitute cottage cheese with Greek yogurt.
