Description

A warm, comforting black bean soup packed with protein and flavor, perfect for cozy evenings.


Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable or chicken broth
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and bell pepper, cooking until softened (about 5 minutes).
  3. Stir in the minced garlic, cumin, and chili powder; cook for 1 minute until fragrant.
  4. Add the black beans, diced tomatoes, and broth.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, optionally garnished with fresh cilantro or avocado.

Notes

This soup tastes even better the next day. Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
