- 2 medium zucchinis, diced
- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish (optional)
Instructions
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant—about 3 minutes.
- Add the ground turkey, breaking it up with a spatula, and sauté until browned and cooked through, about 5-7 minutes.
- Stir in the diced zucchini and cook until tender, about 5-7 minutes.
- Add the chickpeas, cumin, paprika, salt, and pepper. Gently stir to combine and cook for another 3-4 minutes until heated through.
- Serve hot, garnished with fresh parsley if desired.
Notes
This skillet can easily be made ahead of time. Store leftovers in an airtight container in the fridge for up to 3 days.
