- 1 lb ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, sautéing until softened and fragrant.
- Add ground turkey to the skillet and cook until browned, seasoning with paprika, salt, and pepper.
- Combine the diced sweet potatoes with the cooked turkey mixture in a baking dish. Pour in the chicken broth and mix well.
- Top the mixture with shredded cheese.
- Cover the dish with foil and bake for 25-30 minutes; then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and the sweet potatoes are tender.
- Serve warm and enjoy.
