A delightful dish of grilled zucchini topped with creamy goat cheese, fresh basil, and a drizzle of honey, perfect for summer nights.

- 5 medium zucchinis
- Salt
- 1 Tbsp olive oil or avocado oil
- 1/3 cup goat cheese, crumbled
- 2 Tbsp fresh basil, chopped
- 1.5 Tbsp honey
- Salt + pepper, to taste
Instructions
- Start by removing the ends from the zucchinis and slicing them lengthwise into 1/2-inch thick pieces.
- Spread the sliced zucchini on a plate or cutting board, and sprinkle salt liberally over them.
- Let them sit for about 20 minutes to allow excess water to drain out.
- Pat the zucchini slices dry with a clean cloth or paper towel.
- Heat your grill or grill pan to medium-high.
- Brush olive oil or avocado oil generously onto both sides of each zucchini slice.
- Place the zucchini slices onto the grill and cook for 10-15 minutes, flipping halfway through.
- Remove the zucchini from the grill and arrange them on a large serving plate.
- Sprinkle the crumbled goat cheese and chopped basil over the top.
- Finish with a drizzle of honey and season with salt and pepper to taste.
- Enjoy this comforting dish warm.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. For a zesty twist, add cherry tomatoes to the grill.
