Description

A delightful dish of grilled zucchini topped with creamy goat cheese, fresh basil, and a drizzle of honey, perfect for summer nights.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Salt + pepper, to taste

Instructions

  1. Start by removing the ends from the zucchinis and slicing them lengthwise into 1/2-inch thick pieces.
  2. Spread the sliced zucchini on a plate or cutting board, and sprinkle salt liberally over them.
  3. Let them sit for about 20 minutes to allow excess water to drain out.
  4. Pat the zucchini slices dry with a clean cloth or paper towel.
  5. Heat your grill or grill pan to medium-high.
  6. Brush olive oil or avocado oil generously onto both sides of each zucchini slice.
  7. Place the zucchini slices onto the grill and cook for 10-15 minutes, flipping halfway through.
  8. Remove the zucchini from the grill and arrange them on a large serving plate.
  9. Sprinkle the crumbled goat cheese and chopped basil over the top.
  10. Finish with a drizzle of honey and season with salt and pepper to taste.
  11. Enjoy this comforting dish warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For a zesty twist, add cherry tomatoes to the grill.
