Description

A delightful Greek Pasta Salad that’s quick, easy, and packed with fresh flavors, perfect for potlucks or weeknight dinners.

Ingredients

Scale
  • 8 oz penne pasta
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 tablespoons mayonnaise
  • 1 tablespoon Greek seasoning
  • 1 cup grape tomatoes, halved
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh basil, chopped

Instructions

  1. Cook the penne pasta according to package instructions, then drain and let it cool.
  2. Combine the cooled pasta with olive oil, lemon juice, and mayonnaise in a large bowl. Stir until the pasta is well coated.
  3. Add Greek seasoning, halved grape tomatoes, crumbled feta cheese, and chopped basil.
  4. Toss everything together until well combined—each bite should be filled with vibrant flavors!
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to mingle beautifully.
  6. Serve chilled as a refreshing side dish, especially great for potlucks or family gatherings.

Notes

This salad tastes even better when made in advance, allowing the flavors to meld overnight. If you’re out of mayonnaise, Greek yogurt can be a delightful substitute.
