Description

Tender steak bites marinated in garlic and balsamic glaze, served with roasted baby potatoes and green beans.


Ingredients

  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1.5 lb baby gold potatoes (quartered)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder

Instructions

  1. Combine cubed steak, olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and crushed red pepper (if using) in a bowl. Let it marinate for at least 15 minutes.
  2. Preheat your oven to 400°F (200°C). Toss the quartered baby gold potatoes and trimmed green beans with olive oil, salt, black pepper, garlic powder, and paprika in a large mixing bowl. Spread on a baking sheet and roast for about 25 minutes.
  3. Sear the marinated steak bites in a skillet over medium-high heat for 3-4 minutes on each side until browned.
  4. Add minced garlic, balsamic vinegar, beef broth, soy sauce, and honey to the skillet. Stir and let simmer until slightly thickened.
  5. Serve the steak bites over roasted potatoes and green beans, drizzling the balsamic glaze on top.

Notes

Marinate the steak the night before for deeper flavor. Store leftovers in an airtight container for up to three days.
