Description

A creamy and nostalgic cheesecake inspired by frosted animal cookies, perfect for any occasion.


Ingredients

  • 1 1/2 cups frosted animal cookies (crushed)
  • 1/2 cup unsalted butter (melted)
  • 2 cups cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup white chocolate (melted)
  • Sprinkles (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix crushed frosted animal cookies and melted butter to form the crust. Press this mixture firmly into the bottom of a springform pan.
  3. In a mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla, mixing until well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Fold in some of the crushed frosted animal cookies, reserving some for topping later.
  6. Carefully pour the cheesecake mixture over the crust, smoothing the top out with a spatula.
  7. Bake for 40-50 minutes or until the center is set and only slightly jiggly.
  8. Allow the cheesecake to cool, and then refrigerate it for at least 240 minutes or overnight to let it firm up.
  9. Before serving, drizzle with melted white chocolate and sprinkle additional animal cookies and festive sprinkles on top for that extra touch of whimsy.

Notes

Make ahead up to a week in advance. To avoid cracks, place a pan of water on the lower rack while baking.
