Description

These Easy Strawberry Cheesecake Sweet Rolls are a cozy delight, perfect for breakfast or an afternoon treat, filled with creamy cheesecake and sweet strawberries.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup milk, warmed
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, chopped
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. In a bowl, combine the flour, sugar, yeast, and salt.
  2. In another bowl, mix the warmed milk, melted butter, and egg until well combined.
  3. Slowly combine the wet ingredients with the dry ingredients until a soft dough forms.
  4. Knead for 5-7 minutes until smooth and elastic.
  5. Place it in a greased bowl, cover with a cloth, and let it rise for 1 hour until doubled in size.
  6. Beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy. Set aside.
  7. In a saucepan over medium heat, combine the chopped strawberries, sugar, lemon juice, and cornstarch.
  8. Stir gently until the mixture starts to thicken, about 5-7 minutes. Remove from heat and let cool.
  9. Once your dough has risen, roll it out on a floured surface into a rectangular shape.
  10. Spread the cheesecake filling evenly across the surface, followed by a generous layer of strawberry compote.
  11. Starting from one edge, gently roll the dough into a tight log.
  12. Pinch the seams to seal and cut into individual rolls, about 1-2 inches thick.
  13. Place the rolls in a greased baking dish, cover with a cloth, and let them rise for another 30 minutes until puffy.
  14. Preheat your oven to 350°F (175°C).
  15. Bake the rolls for 20-25 minutes, or until they’re golden brown.
  16. Let them cool slightly before serving, and perhaps drizzle with a little extra cream cheese icing if you’re feeling indulgent!
