- 1 cup breadcrumbs (can substitute with crushed crackers)
- 1 cup milk
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 cup ketchup (plus extra for topping)
- 2 tablespoons Worcestershire sauce
- Optional: chopped parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it with cooking spray.
- Combine the ground beef, breadcrumbs, milk, diced onion, minced garlic, eggs, salt, pepper, oregano, ketchup, and Worcestershire sauce in a large mixing bowl. Use your hands to mix everything together until well incorporated.
- Transfer the meat mixture into the prepared loaf pan, shaping it into a nice loaf. Spread extra ketchup over the top.
- Bake in the preheated oven for about 60 minutes, or until cooked through.
- Allow the meatloaf to rest for 10-15 minutes before slicing.
- Serve warm, garnished with chopped parsley if desired, or let it cool completely before freezing.

Make-ahead advice: Prepare the meat mixture on a Sunday and store it in the fridge for a quick dinner during the week. For freezing, wrap tightly in plastic wrap and place it in a freezer-safe bag or container.
