- ¾ lb chicken thighs (or chicken breasts)
- 1 Tablespoon vegetable oil
- 1 Tablespoon toasted white sesame seeds
- â…“ cup low sodium soy sauce
- â…“ cup mirin
- â…“ cup sugar
- 1 teaspoon minced garlic or ginger (optional)
Instructions
- Prep the chicken: Using a meat mallet, flatten to about ¾ inch thick and place in a zipper bag to marinate.
- Combine soy sauce, mirin, and sugar in a small bowl until dissolved. Reserve half for later. Pour the other half over the chicken and marinate for at least 15 minutes.
- Cook the chicken using your method of choice: grill for 6-7 minutes per side, pan fry in oil for 7-8 minutes per side, or bake at 400°F for 20-25 minutes.
- Serve the chicken sliced with reserved marinade drizzled on top and sprinkled with sesame seeds, over rice or veggies.
Notes
For extra flavor, marinate the chicken overnight. For a vegetarian option, swap chicken for tofu.
