Description

A delightful and easy chicken teriyaki recipe featuring a flavorful marinade, perfect for weeknight dinners and meal prep.


Ingredients

  • ¾ lb chicken thighs (or chicken breasts)
  • 1 Tablespoon vegetable oil
  • 1 Tablespoon toasted white sesame seeds
  • â…“ cup low sodium soy sauce
  • â…“ cup mirin
  • â…“ cup sugar
  • 1 teaspoon minced garlic or ginger (optional)

Instructions

  1. Prep the chicken: Using a meat mallet, flatten to about ¾ inch thick and place in a zipper bag to marinate.
  2. Combine soy sauce, mirin, and sugar in a small bowl until dissolved. Reserve half for later. Pour the other half over the chicken and marinate for at least 15 minutes.
  3. Cook the chicken using your method of choice: grill for 6-7 minutes per side, pan fry in oil for 7-8 minutes per side, or bake at 400°F for 20-25 minutes.
  4. Serve the chicken sliced with reserved marinade drizzled on top and sprinkled with sesame seeds, over rice or veggies.

Notes

For extra flavor, marinate the chicken overnight. For a vegetarian option, swap chicken for tofu.
