Description

A hearty and comforting chicken meatball soup that’s perfect for weeknight dinners. Packed with tender meatballs and fresh vegetables, it’s a family favorite.


Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper until well combined. Form the mixture into small meatballs.
  2. In a large pot, bring the chicken broth to a boil.
  3. Add the diced carrots and celery to the pot and simmer for about 5 minutes until they start to soften.
  4. Carefully add the chicken meatballs to the pot and cook until they are tender and fully cooked, about 10-12 minutes.
  5. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley for a pop of color and freshness.
