- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian herbs
- Salt and pepper to taste
- 6 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- Fresh parsley for garnish
Instructions
- In a bowl, mix ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper until well combined. Form the mixture into small meatballs.
- In a large pot, bring the chicken broth to a boil.
- Add the diced carrots and celery to the pot and simmer for about 5 minutes until they start to soften.
- Carefully add the chicken meatballs to the pot and cook until they are tender and fully cooked, about 10-12 minutes.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley for a pop of color and freshness.
