Description

A comforting pasta salad that combines the flavors of classic deviled eggs with elbow macaroni, perfect for potlucks and family dinners.


Ingredients

  • 8 ounces elbow macaroni
  • 6 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, chopped
  • 1/4 cup celery, chopped
  • Paprika for garnish

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and rinse with cold water to cool it down.
  2. In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well until smooth and creamy.
  3. Add the cooked macaroni, green onions, and celery to the egg mixture. Stir gently until everything is evenly coated in the dressing.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Garnish with a sprinkle of paprika to add a pop of color and a hint of smokiness. Enjoy!
