Description

Ingredients

  • 4 tortillas
  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat oil in a skillet over medium heat to cover the bottom of the pan.
  2. Combine mashed potatoes, cheese, green onions, salt, and pepper in a bowl; mix until creamy.
  3. Spoon the potato mixture onto half of each tortilla and fold them in half.
  4. Fry the tacos in the skillet for 3-4 minutes on each side until golden brown and crispy.
  5. Drain on paper towels to remove excess oil, and serve warm with sour cream.
