Description

Cozy and creamy, this White Chicken Chili is a warm hug in a bowl, perfect for easy weeknight dinners or leisurely weekend gatherings.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream or sour cream
  • Fresh cilantro for garnish

Instructions

  1. Combine chicken breasts, white beans, diced green chiles, onion, garlic, chicken broth, cumin, chili powder, paprika, salt, and pepper in a crockpot.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. Shred the chicken in the pot about 30 minutes before serving.
  4. Stir in heavy cream or sour cream, then mix well.
  5. Serve hot, garnished with fresh cilantro.

Notes

For an extra kick, add jalapeños or cayenne pepper. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
