- 1 pound boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup heavy cream or sour cream
- Fresh cilantro for garnish
Instructions
- Combine chicken breasts, white beans, diced green chiles, onion, garlic, chicken broth, cumin, chili powder, paprika, salt, and pepper in a crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken in the pot about 30 minutes before serving.
- Stir in heavy cream or sour cream, then mix well.
- Serve hot, garnished with fresh cilantro.
Notes
For an extra kick, add jalapeños or cayenne pepper. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
