Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan to ensure easy removal later.
  2. Combine the flour and powdered sugar, then cut in the softened butter until the mixture resembles coarse crumbs. Press this crumble into the bottom of your prepared pan.
  3. Whisk together the eggs, granulated sugar, fresh lemon juice, lemon zest, baking powder, and a pinch of salt in another bowl. Pour this mixture over the crust.
  4. Bake for 20-25 minutes, or until the center is set and the edges are slightly golden. Let them cool completely in the pan before slicing into squares.
