Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan to ensure easy removal later.
- Combine the flour and powdered sugar, then cut in the softened butter until the mixture resembles coarse crumbs. Press this crumble into the bottom of your prepared pan.
- Whisk together the eggs, granulated sugar, fresh lemon juice, lemon zest, baking powder, and a pinch of salt in another bowl. Pour this mixture over the crust.
- Bake for 20-25 minutes, or until the center is set and the edges are slightly golden. Let them cool completely in the pan before slicing into squares.
