- 4 chicken thighs
- 1 cup heavy cream
- 2 tablespoons fresh herbs (like thyme and rosemary)

- 2 pounds potatoes
- 1/2 cup milk
- 4 tablespoons butter
- 2 cups carrots
- 2 tablespoons honey
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs with salt, pepper, and fresh herbs, spreading the flavors evenly.
- In a skillet over medium heat, sear the chicken thighs until golden brown on both sides.
- Transfer the skillet to the oven and bake for 25-30 minutes.
- Meanwhile, peel and chop the potatoes and boil them in salted water until tender, about 15-20 minutes.
- Drain the potatoes, then mash with milk and butter until creamy.
- For the honey glazed carrots, sauté them in olive oil until they start to soften, then drizzle in the honey and cook until tender.
- Serve the baked chicken alongside your mashed potatoes and honey glazed carrots.
