Ingredients

  • 4 chicken thighs
  • 1 cup heavy cream
  • 2 tablespoons fresh herbs (like thyme and rosemary)
  • Salt and pepper to taste
  • 2 pounds potatoes
  • 1/2 cup milk
  • 4 tablespoons butter
  • 2 cups carrots
  • 2 tablespoons honey
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, and fresh herbs, spreading the flavors evenly.
  3. In a skillet over medium heat, sear the chicken thighs until golden brown on both sides.
  4. Transfer the skillet to the oven and bake for 25-30 minutes.
  5. Meanwhile, peel and chop the potatoes and boil them in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes, then mash with milk and butter until creamy.
  7. For the honey glazed carrots, sauté them in olive oil until they start to soften, then drizzle in the honey and cook until tender.
  8. Serve the baked chicken alongside your mashed potatoes and honey glazed carrots.

Notes
