- 1 cup fresh or frozen cranberries

- 1 large egg
- 1 teaspoon orange zest
- 1/2 cup brown sugar
- 1/3 cup rolled oats
- 1/4 cup butter, softened
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix together the flour, granulated sugar, baking powder, baking soda, and salt in a large bowl until well combined.
- Whisk together the orange juice, vegetable oil, egg, and orange zest in another bowl until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Carefully fold in the cranberries to keep them intact.
- Mix together the brown sugar, rolled oats, softened butter, and cinnamon in a separate bowl to create the streusel topping.
- Spoon the muffin batter into the prepared muffin tins, filling them about 2/3 full. Generously sprinkle the streusel topping over each muffin.
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
