Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon orange zest
  • 1/2 cup brown sugar
  • 1/3 cup rolled oats
  • 1/4 cup butter, softened
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix together the flour, granulated sugar, baking powder, baking soda, and salt in a large bowl until well combined.
  3. Whisk together the orange juice, vegetable oil, egg, and orange zest in another bowl until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Carefully fold in the cranberries to keep them intact.
  5. Mix together the brown sugar, rolled oats, softened butter, and cinnamon in a separate bowl to create the streusel topping.
  6. Spoon the muffin batter into the prepared muffin tins, filling them about 2/3 full. Generously sprinkle the streusel topping over each muffin.
  7. Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
