Description

A moist and tender bundt cake featuring the sweet and tart combination of cranberries and oranges, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • Zest of one orange (about 1 tablespoon)
  • Juice of one orange
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons sugar (for sprinkling)
  • 1 1/2 cups fresh cranberries
  • For the Icing: 1 cup powdered sugar
  • 23 tablespoons water, milk, or orange juice

Instructions

  1. Preheat your oven to 350°F. Spray a bundt pan with cooking spray. Sprinkle 2 tablespoons of sugar and half of the cranberries (1/4 cup) over the bottom of the pan. Set aside.
  2. Cream the softened butter and granulated sugar with an electric mixer until the mixture turns a light lemon color, about 4-5 minutes.
  3. Add the eggs, one at a time, ensuring each is incorporated fully before adding the next.
  4. Pour in the orange juice and add the zest. Mix well, followed by the sour cream until everything is blended.
  5. Gradually add the flour, salt, and baking powder to the wet ingredients, mixing gently until just combined.
  6. Fold in the remaining cranberries into the batter.
  7. Pour the batter into your prepared bundt pan, smoothing the top evenly. Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 5 minutes before gently inverting it onto a wire rack to cool completely.
  9. Whip up your icing by combining the powdered sugar with water, milk, or orange juice to achieve a smooth consistency. Drizzle the icing over the top and sides of the cooled cake.

Notes

This cake can be made a day in advance! Store it tightly wrapped at room temperature to keep it moist and flavorful.
