Description

Ingredients

  • 2 pounds zucchini
  • 1 teaspoon salt
  • 1 large egg
  • 1 large red onion, thinly sliced
  • 2 cloves garlic, grated
  • 1 teaspoon dried oregano (or dill)
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 4 ounces crumbled feta cheese (optional)

Instructions

  1. Grate the zucchini and toss it with 1 teaspoon of salt. Let it sit for 10 minutes, allowing the moisture to escape.
  2. Squeeze out the excess moisture from the zucchini, ensuring your fritters are crispy.
  3. Beat the large egg in a mixing bowl and combine it with the squeezed zucchini, optional feta, red onion, garlic, oregano, flour, baking powder, ¾ teaspoon salt, and black pepper. Mix until you have a thick, cohesive batter.
  4. Heat the olive oil in a skillet over medium-high heat. Drop spoonfuls of batter into the skillet, flattening them slightly as you go.
  5. Cook for 3-4 minutes on each side until they turn golden brown and crispy.
  6. Transfer the cooked fritters to a paper towel-lined plate to absorb any excess oil. Serve them hot, straight from the skillet!
